To make cake pops:
When cake is cooled break into pieces into a large bowl. Use a fork to create small crumbs.
Add icing, one cup at a time, and mix to combine. You have enough icing when the mixture forms a sticky ball easily in your hands.
Using a Tablespoon or a dough scoop, roll mixture into balls and place into the refrigerator to set- at least 3 hours or overnight.
Pour candy melts or almond bark in a large microwave-safe bowl or mug. Add 1 Tbsp. vegetable shortening. Melt on low power in a microwave until just melted. (You do not want to get the candy hot or it will seize. Watch it very carefully, stirring every 30 seconds or so.)
Take cake balls out of the refrigerator 5 or so at a time.
If desired, apply sprinkles immediately.
Insert bottom of stick into styrofoam disk. Let cool until candy is set.
Store in the refrigerator.
Yield: Approximately 50-75 cake pops

1-2 cups frosting
Candy Melts or almond bark
1-2 Tbsp. vegetable shortening
lollipop sticks
styrofoam disks
sprinkles

Dip Lollipop stick in the melted candy. Insert stick about halfway into the cake ball. Dip cake ball into melted candy, coat with candy. Remove from candy and tap stick gently on side of the mug until excess candy has dripped from the cake pop.
If desired, apply sprinkles immediately.
Insert bottom of stick into styrofoam disk. Let cool until candy is set.
Store in the refrigerator.

I enjoyed your demo. I first saw it on TV and had to look you up to check out how make them again. I've made a batch and they went over great. I've been thinking of doing them for the holidays. When I make cakes I save the trimmings from the bottom of the cake that is cut off to level the layers and freeze the trimmings. That way I can make different types of cake pops without having to make a whole new cake.
