S'mores Toffee Bark {Recipe}

This recipe is amazing.
I found it in the Busy in Brooklyn blog a few months ago when making a special S'mores treat for my sister's wedding festivities. I changed it just a little, as I like a little more s'moresy goodness on top.

I highly recommend making it only when you have somewhere to take it, or you may end up eating the entire batch all alone! It is also called "S'Mores Crack," and for good reason!

What You Need:
2 sleeves honey graham crackers
2 sticks (1 cup) butter
1 cup brown sugar
1 tsp. vanilla
pinch of salt (if using unsalted butter)
1 1/2 cups mini chocolate chips
2-4 cups mini marshmallows


Begin by preheating the oven to 350-degrees (F) and lining a large, rimmed baking sheet with parchment paper. You can substitute foil, if you want, but I find parchment works much better.

Line up a single layer of graham crackers on your baking sheet, breaking the crackers, if necessary.

In a small saucepan, melt the butter. Add the bown sugar, and heat over medium until the mixture is bubbling. Then allow to boil for a 3-5 more minutes. Remove from the heat. Add the salt and vanilla. (Be careful. It often boils up when you add the vanilla, and could burn you.)

Pour the sugar mixture over the graham crackers, and spread with a spatula to coat.

Bake at 350-degrees (F) for about 10-15 minutes until the caramel is bubbling and golden.

Remove from the oven, and sprinkle the mini chocolate chips over the top. Let it set for about a minute, then spread the chips. (You could also leave them as chips, if you want.)

Sprinkle the marshmallows over the melted chocolate. Place under the broiler until the marshmallows are golden.
*Note: DO NOT WALK AWAY at this step! The marshmallows go from white to very dark quickly, and can burn in just seconds!

Allow to cool completely before you break into small pieces. Store in an airtight container.

Makes enough to serve a large group... or a small group... or just one person, if you're really, really hungry.
