Monster Cookies Recipe

These cookies are some of my family's favorites... peanut butter, oats, chocolate, M&Ms, you just can't go wrong.

What You Need:
3 1/2 cup oats, toasted and cooled
1/2 cup (one stick) butter, softened
1 cup light brown sugar
1 cup granulated sugar
3 eggs (at room temperature)
1 Tbsp. vanilla
2 tsp. baking soda
1 cup flour
pinch of salt
1 1/2 cups (12 oz.) chunky peanut butter
6 oz. chocolate chips
6 oz. M&Ms

Yield: About 4-5 dozen 2" round cookies

These are really simple cookies to make.
Toast the oats on a large, rimmed baking sheet for 5-10 minutes at 350-degrees. Until they just start to smell fragrant and turn a little golden.
Allow them to cool.

Cream together the butter and two sugars.
Add eggs, and mix well.
Add vanilla, baking soda, flour and salt. Mix until combined.

Add half of the oats, all of the peanut butter, and the chocolate chips. Mix until combined.

Add the remaining oats and the M&Ms. Mix until combined.

You can bake them immediately, but I find that they often taste better, and don't spread as much if you refrigerate them for about 30 minutes. The dough also freezes really well. I often freeze half of the dough, and bake just half of the cookies.

Use 1 Tbsp. cookie scoop, or a large spoon to measure cookies.

You will want to flatten the dough a little into thick disks.

Bake at 350 for 8-10 minutes. You do not want the tops of the cookies to get very golden. These cookies should remain soft.

  1. Does the peanut butter get added with the stick of butter and sugars at the beginning or somewhere else?

  2. Apparently I just blocked out the peanut butter when writing this recipe. I am so sorry.
    I add the peanut butter with the first half of the oats. I will go correct that. Thank you so much for catching this error. I need an editor!
