Pumpkin Mini-Cupcakes with Cream Cheese Icing

So, I was having a discussion the other night with some friends about how when it comes to Thanksgiving in some families... there's really no point in trying to change anything, ever.

If you spend your holiday at one of those gatherings, then please, don't try to buck tradition and bypass the pie for some cute cupcakes or even adorable cake pops. However, if you're lucky enough to get to choose... I highly recommend these for a little pumpkin treat. They're so easy!


Nothing too hard here...
I made my favorite pumpkin cake recipe...
Scooped it into a mini-cupcake pan. My scoop is about 1 1/2 tsp. I think a tablespoon is way too big, and a teaspoon is too small, so I stick with this for my mini-cupcakes.

They bake for about 12-15 minutes in a 350-degree oven.
And you know, the thing I love most about minis is that they're cool about 5 minutes after you take them out of the oven. No waiting for decorating.

Whip up a batch of cream cheese icing.

You know the hardest part of making these cupcakes? Finding the autumn sprinkles after Halloween is over. HELLO?! Don't they know that Thanksgiving is a celebration of harvest and autumn? Christmas is NOT HERE YET!!
