Rhubarb season has begun. My plants are already giant and ready to be picked. I love rhubarb! Below are links to my favorite rhubarb recipes from the blog. These recipes are as easy as adding to a cake mix or as involved as cheesecake. You choose how much work you're willing to do this week!

Summer means only one thing in my house: strawberry picking. We love fresh strawberries, and always go overboard, picking dozens of pounds of strawberries... many of which will end up in the freezer for a while to enjoy for months to come.

Homemade Ice Cream Sandwiches {Recipe}

My children are spoiled. Every time they return from any kind of trip -- camping, time with their grandparents, etc. -- they expect a new treat. I oblige. This time... homemade ice cream sandwiches made with peanut butter cookies, store-bought ice cream and mini chocolate chips. They were actually not that hard to make, considering how amazingly yummy they were!!

What You Need:
For the Peanut Butter Cookies:
1 egg
1 cup sugar
1 cup peanut butter

2-3 cups Store-bought or homemade ice cream
1-2 cups mini chocolate chips, chopped peanuts, rainbow sprinkles, mini m&ms, etc.

Yield: 5-6 2-3" ice cream sandwiches

Baseball Jersey and Scout Uniform Cookies


Baseball season is coming to an end... yet again.
This year, I decided to make some jersey cookies for my boys and their teammates.

The same weekend, my kiddos came back from Boy Scout camp. So, I made them some Scout Uniform Shirt cookies, as well.

I made all of these cookies using my favorite Chocolate Cookie Recipe and Royal Icing.

I made the t-shirt shape using a onesie cookie cutter that I purchased for a baby shower a few years ago, and just cut off the bottom part.

Baseball Flowers for Mother's Day


This Mother's Day weekend, I get the pleasure of spending my special day at a baseball tournament. So, I decided to make some "Baseball Flowers" for myself and the other Baseball Moms. I wish I'd had better flower cookie cutters, but these will do.

(I also did make a dozen regular baseballs for the players because, well, I want the moms to actually get to eat their cookies.)

It's a weird Fourth of July here. My kids finally outgrew our family 'parade' around the neighborhood, and Boy Scout Camp is WAY more fun than a family BBQ. But Fourth of July treats are mandatory no matter how you celebrate!

Rhubarb Crumble Recipe {Gluten-Free}

This is an adjusted version of my original Fruit Crisp recipe to be gluten-free, and even vegan if you substitute for the butter. But whether you make it gluten-free or vegan, it's still AMAZING!

What You Need:
1 3/4 cup rolled oats, toasted (divided)
1/2 cup toasted walnuts, chopped fine
1/2 cup brown sugar
1/2 tsp. cinnamon
1/2 tsp. ground ginger (or 1 tsp. fresh ginger)
1/2 cup (1 stick) butter (or Earth Balance Spread for vegan)
1/4-1/2 cup sugar
2 Tbsp. corn starch
1 tsp. vanilla
4-6 cups rhubarb, chopped into 1-2" chunks
Optional: 1 cup strawberries or raspberries

Easy Easter Treat for Kids {Gluten-Free Recipe}

These nests are made from gluten-free no-bake chocolate cookies, and topped with Cadbury chocolate eggs and Peeps. They take about 25 minutes total to make, and are easy to let your little ones help with.


What You Need:
1 stick unsalted butter
1/4 cup whole milk
1 1/2 cups granulated sugar
4 Tbsp. cocoa powder (not 'special dark')
1/2 tsp. salt
1 tsp. vanilla
1 cup peanut butter (crunchy or creamy okay)
3 cups regular or quick oats

Yield: 2 dozen 3" cookies

Strawberry-Rhubarb Cream Cake {Recipe}

Every summer, my boys go to Cub Scout camp for the weekend with their dad. (I don't camp.) So, every year, I celebrate their return with a yummy treat. This year, we had just gone strawberry picking, and had a bunch of great rhubarb, so I came up with this... a Strawberry-Rhubarb Cream Cake.
(Every summer my husband also takes the camera to camp with him, so I never get many pictures.)

What You Need:
For the Cake
White Cake Mix (or favorite Vanilla Cake Recipe)
  - 3 eggs
  - 1 1/4- 1 1/2 cups whole milk
  - 1 Tbsp. white vinegar (optional)

For the Strawberry-Rhubarb Sauce
3 cups chopped rhubarb
1 1/2 cups strawberries (chopped if large)
2 Tbsp. corn starch
1/4-1/2 cup sugar (if necessary)

For the Whipped Cream Frosting
4 oz. cream cheese (at room temperature)
1-2 cups powdered sugar (to taste)
1 pint (2 cups) heavy whipping cream (very cold)
1 tsp. vanilla (optional)

Yield: 1 8"x4" round cake - approx. 12-16 servings

Rhubarb Recipes You MUST Try

The rhubarb in my garden is growing wild already this spring. I've already made a crisp and some rhubarb sauce. I'm trying some new recipes you will see soon, but in the meantime, I leave you with some of my favorite recipes from rhubarb seasons past.

My most popular rhubarb recipe... and the best way to use rhubarb, in my opinion.

Perfect for picnics!

Perfect over ice cream, or on a biscuit.

This year I added a cup of frozen raspberries to it. Soooo good!

These use strawberry Jello, and are a little sweeter.

Easy Rhubarb Cake
Using a simple white cake mix and whipped cream frosting.

Flourless Chocolate Cake {Recipe}

This chocolate cake received rave reviews from our entire Fourth of July party. It was so rich, so tasty, and best-of-all... It's flourless, so our friends with dietary restrictions were as happy with it as we sugary gluten eaters!
It did taste more like a brownie than cake, but it was still very good. My favorite thing is that it is adapted, ironically, from This recipe found on the King Arthur Flour website. And it is so easy that my eight-year-old did most of the work making it.

What You Need:
1 cup semisweet chocolate chips
2 sticks (1 cup) unsalted butter
1 1/2 cup sugar*
1/2 tsp. salt
2 tsp. finely ground coffee or espresso powder 
1 Tbsp. vanilla
6 eggs (at room temperature)
1 cup cocoa powder

* Note: I am going to test this with just 1 cup sugar next time to lower the carb count even more, I'll let you know how that goes.

Cool Fourth of July Easy "Pies"

This treat is perfect if you love pie, but don't want to heat up the kitchen for hours. You still have to bake some of the crust, but it only takes five minutes, not an hour, in the oven.

What You Need
Pie Crust
   You can use store-bought or one of my Two Favorite Pie Crust Recipes
   (Flaky Pie Crust or Rich Pie Crust).
Strawberry-Rhubarb Sauce
   Or you can use store-bought pie filling. Cherry & Blueberry would make a cool red, white and blue pie.
Vanilla Ice Cream


Pretty simple instructions here...

Make the crust.
For mine, I used my Flaky Pie Crust Recipe, and cut it into stars (or even just cut into strips if you want to make it even easier).  Be sure to prick it with a fork before you cut it so that the crust doesn't get funky air bubbles. Bake at 425-degrees for just 5-7 minutes.
I only used 1/4 of the dough, and it made about six to eight "pies."

Assemble them in cute cups or mugs, and top with ice cream.
