Ruffle Cake Tutorial - Valentine's Day

Ruffle cakes are so, so pretty. And honestly, I expected them to be harder than they really are. The biggest challenge-- having enough icing!

What You Need:
Cake (This is a 6"x2" cake.)
Buttercream Icing (I used this Decorator's Buttercream Recipe.)*
Piping Bag with Tip #104

*Note: For a 6" cake, I used about 4-5 cups of icing. If you're making a more traditional, 8-9" round cake, and if it's taller, you need to make a double batch, just to be sure -- Especially if you're coloring the icing. (You always want to have more icing than you need because getting it the exact.same.color is really hard.)

White and Glittery Pumpkin Cake Pops

I know. I lied. I said no more pumpkin cake pops.

What can I say? It was for the bake sale at school... the theme of which was Thanksgiving treats.
I couldn't just make these glitter pumpkins and white pumpkins and not show them to you!

Pumpkin Cake Bites

These little pumpkins are just as yummy as my pumpkin cake pops, but even easier to make, store and display, because they don't have sticks!

What You Need:
Pumpkin Cake*
Cream Cheese Frosting
Orange Candy Melts
Brown or Green Jimmies Sprinkles
Toothpicks - preferably with one flat end
Optional:
Green Candy Melts
Decorating bottle or disposable decorating bags

*Note: My pumpkin cake recipe makes about 6-7 cups of batter. That is more than your average cake mix, so this makes about 70 or more cake pops or cake bites. If you don't want that many, use some of the batter to make cupcakes or something. It takes a lot of work to make that many cake balls!

Pecan Turtle Cake Recipe

Pink-Pink Cake Pops

These cake pops would be perfect for a baby girl baby shower. They're all pink and pretty and yummy. Filled with strawberry cake, cream cheese icing and topped with Pink Candy Melts and white nonpariels sprinkles.

Truth be told, I made them for a birthday party for a girl who just really likes all things pink.

I didn't do a step-by-step on these, because they're pretty basic.

Tip for Tuesday - Don't throw that away!

If you've read much of this blog, you know that I'm a big fan of saving things, reusing things, repurposing things, etc. The same is true of my Candy Melts.

When I make cake pops, I almost never guess the right amount of Candy Melts for the number of pops that I'm making. That usually means I have a lot leftover.

So, when I'm finished dipping my pops, I simply spread the extra candy onto a piece of parchment paper.

When it's set, I break it into small pieces to reuse next time I make pops. Store it in a zipper bag, and melt them along with your new melts next time you make cake pops.

I recommend only reheating the melts once or twice. If you reheat them more than that they tend to start to get clumpy.
Doing this also helps me from my least-favorite cake pop cleanup chore-- dealing with Candy Melts that have hardened into the bottom of the mug. Ugh!

Neapolitan Cake Pops - Three Flavors in One Pop

These neapolitan ice cream cake pops were the result of my having "leftovers" of each of these three flavors in my freezer, all at the same time. They turned out really good, and really pretty. But I will warn you that making these is not for the cake pop beginner. They're time consuming and a little challenging.

What You Need:
Cake in each strawberry, vanilla & chocolate flavors*
Cream Cheese Icing
Candy Meltsin Pink, White and Chocolate
Vegetable Oil
Lollipop Sticks
Styrofoam or parchment paper

Tip for Tuesday - Ice Pack for Cake Pops

Making cake pops is never exactly easy. But making cake pops on a hot, humid summer day can be downright miserable. These baby boy cake pops I made for a shower last summer show it. See how they're sweating??

My kitchen gets hot. It works out well in the winter when its 25-below outside. But in the summer, even with the a/c cranking... it's a real pain! So, I started using an ice pack for my cake pops last summer. (See it there? Tucked under the cake ball plate?)

Slip an ice pack underneath the plate or pan of cake balls, before you dip them in the candy. It helps keep the cake balls a little cooler, and a little less likely to fall off of the stick. You still want to work with just 5-10 cake balls at a time, but the ice pack help keep those few cooler as well.
