Beach Ball Cake Pops

I'm making these beach ball cake pops for a pool-side birthday party for a four-year-old.


What you need
Any cake, baked and cooled
1-2 cups of icing (any kind)
White candy melts or almond bark
lollipop sticks
Tall mug or other heatproof glass
colored sugar in red, yellow & blue*
Styrofoam block or disk

* I do not recommend the 4-pack of colored sugars, even though all three colors are in there because you can't pour the sugar out (or back in). I recommend buying individual bottles of each color.


You'll start by making cake balls.
Break your cake into pieces and set into a large bowl. Make small crumbs with a fork or your fingers. Add icing about 1/2 cup at a time to the crumbs until they form a mixture that will hold a ball shape. Using a dough scoop or Tablespoon, roll the dough into balls. LET SET IN THE REFRIGERATOR AT LEAST 3 HOURS or overnight.

Combine Candy Melts with about a Tbsp. of oil or shortening in a large mug or heatproof glass. This helps thin the candy coating to coat the pops better. Melt the candy in the microwave on low power (defrost power), stirring every 30 seconds. Watching closely that it doesn't get hot. You want it just melted.

Working with about 4 or 5 cake balls at a time (or you can set a cooler pack from the freezer under your container of cake balls to keep them all cool while you work), begin making the cake pops.

Dip about 1/4 inch of the stick into the melted candy. Insert the stick about halfway into the cake ball.

Dip the cake pop quickly into the melted candy. I try to dip it in so that candy is higher than the top of the ball... then lean it one way, then the other, which gets it coated. Just do NOT swirl or twirl it in the candy. Your cake ball will fall off.

Then tap the stick gently against the side of the mug to allow excess candy to drip off.

Insert the bottom of the stick into styrofoam disk or block to set up. (Allow at least 10-15 minutes before getting to the next step.)

To decorate for the beach balls, start with a small food-safe paintbrush. Use it to paint candy in a stripe.

Immediately dip the painted stripe into a bowl of colored sugar. Do not try to shake the sprinkles over the stripe. It will set up too quickly for you to get good coverage that way. You may need to tap the stick gently on the side of the sprinkle bowl to remove excess sprinkles.

* As I mentioned above, buy individual bottles of sprinkles for each color. Shaking them out of a multi-pack is an immense waste of time and sprinkles because you can't get them back in there.

You will repeat the painting and dipping for as many stripes as you want to do, alternating colors. I would do all of my pops' red stripes, then all of the blue, then all of the yellow... to allow each color to "set." A few rogue sprinkles of another color will happen.

  4. Cake pops are truly for 365 days of our lives. Even the smallest reason to celebrate, we can make cake pops for it. I really enjoy seeing blogs with pops.
